Juwari soba mean made with 100% buckwheat flour. At Juwari soba Sagatani, we are particular about "freshly ground, freshly made, freshly boiled, and freshly fried" and serve freshly made soba every day. In-house milling on a millstone. The amount of water added is adjusted daily according to the season, weather, condition and surrounding humidity of the buckwheat flour.
For Muslim customers, the menu is not halal-compliant, but the soba menu is no-pork-compliant.
